Easter Mini Style

Happy Easter Week friends!

We are bursting at the seams this week with pre-Easter activities and lots of Birthday celebrations.  My hubby is turning 30 and then we are kicking off our Easter weekend festivities! We have some festive breakfasts planned, Easter inspired toddler activities,  and of course Reagan needs to practice her Easter egg hunting.  The weather has been beautiful (and WARM). I feel like I need to whisper that because it legitimately SNOWED yesterday, and then today ended up being sunny and almost 60 degrees.  I’m terrified of jinxing this weekend and the bucket loads of gorgeous weather we want for our Easter festivities.

In the spirit of the Easter holiday I rounded up some beyond adorable Easter Sunday outfits for baby girl. I can’t wait for Miss Reagan to rock her Easter outfit.  Everything about these sweet styles are fresh for Spring and rosy pink for Easter.

The Easter Bunny has a little more shopping to do and some strategic egg stuffing needs to take place.  I refuse to buy a bunch of Easter candy because my pregnant ass would end up eating all of it.  So I need to come up with a few backup plans and get creative so we can have endless egg hunting fun this weekend.

For those of you who emailed me, Reagan’s First Birthday Dress is from Gap.com and is actually 40% OFF this week, just in time for Easter.  I intentionally bought her a bigger size because I really wanted her to be able to wear it this Spring.  I’m still daydreaming occasionally about what a special and fun little party we had. Easter Basket Goodies

Holy cow its April! We’ve been so looking forward to Easter this year!!! Easter 2016 was Reagan’s first big holiday and my first chance to play the Easter Bunny.  Obviously it goes without saying, she had no freakin’ clue what was going on.  She was around 3 weeks old.  BUT this year is soooooo different and she is starting to get the hang of this holiday thing!!! She is on the verge of walking and that means we can officially have an egg hunt and i’m not sure my heart will handle the cuteness.

The days are long with a toddler, but they are going so quickly at the same time because i’m pregnant.  Baby prepping, spring cleaning, work, and trying to remain active have me fully extended. But i’m oh so happy!!! I wanted to get a head start on Reagan and Baby H’s Easter baskets and thought I would share our findings.  Finding relatively inexpensive, small, age appropriate gifts is tough and i’m not one to buy a bunch of crap!!! If we purchase something, WE USE IT!!!! And I want to get my money’s worth from that purchase. AKA, something Reagan needs and will use.

We have always gone easy on the toys and i’m not going to fill her basket with sweets.  She is a huge fan of her stuffed animals or  “Lovies,” and we seem to go through pacifiers like its going out of style.  I’m obsessed with this limited edition WubbaNub Cow pacifier.  A reusable pair of bunny ears is always a festive addition and will get used over the years. We love to read to Reagan and are always looking to build up her library.  Children’s books are the absolute best and I LOVE anything with a holiday theme.  Its fun to mix up and exchange books from her library based on the season or holiday.

I am so excited for some new books and probably most looking forward to getting those crayons into Miss Reagan’s hands.  I did a ton of research on safe crayons for a one year old.  She is busy sticking everything in her mouth still and the HoneySticks are completely natural and the size is supposed to be great for new little artists. Pinterest says you can tape a piece of paper to the highchair and let them color away. We are going to give it a try and if it doesn’t go well, we’ll just wait another month or so and try again.

Last year I got her Easter Basket from World Market and I was so excited to learn that it is back again this year.  This means that Baby H #2 will get the same basket and they can match for future years. Little details like that are super important to me and I actually go out of my way to think of them.  The basket is the Mint Wire Farmhouse Basket and is also available in white and rustic metal. The mint was just calling to me last year and is the perfect Springy color.

Also totally random, but how CUTE are these Carrot Utensils for a toddler. These might have to make there way into our baskets this year as well. Reagan is absolutely fascinated by silverware and loves to practice using our forks to pick things up. Good practice for her hand eye coordination.

Happy Spring

Awwwwwww Spring has officially arrived and our cooped-up, so over Winter, Summer loving hearts are ECSTATIC!!!! Miss Reagan has been ONE for a few weeks now and we are absolutely positive that these have been the best days of our lives to date!!! There is something about having a beautiful growing child and one on-the-way that gives me so much JOY!!!!  I still have my “oh shit” moments but we are just beyond excited to add Baby #2 to our little family.

As soon as Reagan turned One, she simply took off in terms of development. She is so happy and hitting new milestones left and right. I distinctly recall absolutely sobbing over how fast she was growing when she was like 4 days old. But I was totally bonkers at that point.  Now, I seriously look forward to each day and all the amazing new things she will learn. She is so close to walking and I am so excited to take her to the park for some FUN once she is cruising around.  The stroller just doesn’t do it for her anymore and she gets sooooo bored.  I almost feel guilty taking her out now because I know she would rather be crawling and climbing around the living room getting into everything. Much more fun. But my pregnant self has been loving the sunshine, fresh air, and I swear my energy is so much higher on bright days when we can get out of the house. I can literally feel a difference in my mood if its raining outside vs. sunny. All-in-all, we are LOVING SPRING and are so ready for some consistently sunny days.

I finally had to toss out the beautiful and bright spring blooms from Reagan’s birthday party.  I was able to snap a few photos of how pretty and bright they looked. Having the window ledge littered with flowers completely changed the atmosphere in our home.  I might need to splurge on some more and ramp up the Spring vibe. Has anyone else been swooning over the adorable mini outfits for Easter and Spring?  I am so NOT a fashionista, but I absolutely love dressing Miss Reagan.  I secretly hope we are having another little girl because it is so much fun and I would have no idea where to start dressing a little boy.  I love the mix of comfy clothes with a little feminine style sprinkled in. Totally my vibe but in “mini.” Of course i’ve been living in stretchy tops, maternity clothes, and yoga pants/leggings… so maybe I shouldn’t be talking.

St. Patrick’s Day Favorites

Happy St. Patrick’s Day week friends!!!

We are so excited for the next holiday on our docket…St. Patrick’s Day!!! Its the only time of year I can get away with having Lucky Charms in the house and I simply can’t wait to shamrock shape everything for Miss Reagan.  She could probably care less but its so fun and festive and right up my ally. Since my huge pregnant self just isn’t looking good in green these days, I decided to round up some of my favorite Rainbow inspired baby favorites to celebrate good ol’ st. patty’s day. We are so ready for Spring and some fresh air around here and what better way to brighten a rainy day then with some bright and cheerful rainbow colors.

I am sooooooo in LOVE with the rainbow swimsuit and can’t wait to get it for Miss Reagan.  I also think we need to add the gold moccassins to our shoe collection. I’ve never been able to jump on the baby moccasin band wagon, but these beauties might just make it happen for me.  Like the rest of the world, I am just obsessed with everything gold these days and with Reagan almost walking it seems like a solid investment.  🙂

I have big plans for some green paleo pancakes, lots and lots of festive green treats, and possibly a shamrock shake because my sugar cravings are just out of control these days.  My pregnancy chalkboards are officially back in action, at least for the final trimester, so stay tuned for those.  There are no drinking shenanigans in my future this year, but I might sneak in some Lucky Charm covered cupcakes and of course lots of kisses from our little leprechaun.

Merry Christmas 2016

Happy New Year! I hope you all had a completely wonderful and magical holiday season. We really reined it in this year and kept Christmas and New Years Eve extremely low-key. We were of course so excited to celebrate Reagan’s first Christmas and New Years, and did manage to play up the holiday season just a bit and make it as special as possible for the little lady.

We went to my in-laws house for Christmas and had so much fun enjoying all the festive activities. It went by in a blur and once again I am so thankful I was busy snapping pics and video left and right.  I know it can get a little annoying until you check out all the adorable footage I manage to capture.

We arrived close to Christmas Eve and Miss Reagan did very well in the car. She is such a good little traveler and we had excellent weather which was a huge relief.  We were packed to the brim with presents, luggage, and baby gear and thank goodness we managed to arrive in one piece. We spent Christmas Eve with family, just hanging out enjoying each other and all the cuteness that Miss Reagan provides. We had a delicious prime rib dinner and Reagan enjoyed her first ever taste of mashed potatoes. She was in heaven.  We spent lots of quality time with Jeffrey’s grandparents and were able to do our annual Christmas Eve Pajama tradition in person this year.  Santa got extra excited this year and included the guys for the first time. Rumor has it, they are enjoying the xmas jammies even more then we do each year.img_8401

Every year I have so much fun picking out the coziest pajamas for us to wear on Christmas Eve. I usually go with Gap or Old Navy because they are always on SALE and are the softest, warmest, and long lasting. This year, I was obsessed with anything in red and black buffalo plaid prints and Reagan even got in on the action. She ended up wearing a pair of boys pajamas, but what the heck, it turned out sooooooo cute. She can pretty much rock anything.  Throw on a little red flower headband and she was ready to go for pics. Clearly we have way TOO MANY dogs…

img_8464Miss Reagan was way out of her normal routine and that of course means her sleep schedule was out of whack as well. She woke up at 4am on Christmas Eve and didn’t want to go to bed one bit. The child barely napped to add to the fun. It was way too exciting knowing that Santa was coming and that there was a pile of presents with her name on them. One of our Santa’s fell asleep very early because he was the one who woke up at 4am with her.xmasimg_8414Christmas morning was completely MAGICAL!!!! With the one exception of a certain little christmas elf waking up at 5am.  This time it was my turn to hang out with her, so we watched The Christmas Story on TBS and cuddled on the couch.  Eventually the rest of the family woke up and we enjoyed a nice breakfast together before heading into the living room to open gifts.  I wasn’t sure what Reagan was going to think of all the gifts and had to majorly “check” my mom expectations before we got started. She is after all, only 10 months old and doesn’t really understand what is going on.  After a quick photo of our first Christmas as a family of three, we let Reagan have at it opening presents and tearing wrapping paper. This was clearly the most interesting part for her, but her little face did light up at a few different toys including the best ever giant stuffed giraffe that Santa left for her. img_8421img_8432img_8436img_8444

 She got everything on her wish list, including a few extras, and Mommy and Daddy were very spoiled as well. I’m already super excited for next Christmas when she will understand what is going on a bit more.  But I really tried to remain present in each moment and soak up every second of her first Christmas as a sweet little baby. Next year will be so different, she will practically be a little girl already, and I am so grateful for this year and everything we have been blessed with, especially her cute little face.

Overall, it was a wonderful Christmas filled with relaxation, family, tons of dogs, buffalo plaid everything, and way too much food. Christmas Day was all about recovering and just spending as much time together as a family. I currently still have my decorations and tree up, and am sorta dreading/can’t wait to take everything down. It feels so daunting right now but I know i’ll love the clean empty look of our house for the New Year.

I am so NOT ready for 2017 but need to get my “ish” together because it has arrived.

Christmas Gift Guide for Baby

I think it goes without saying but little Reagan Marie has been a very good girl this year. I have a sneaking suspicion that Santa is going to be very good to her. I decided to put together a little gift guide with some of the ideas I found for Miss Reagan. Being that this is her first Christmas, we are just so excited to see her little face light up when she gets all her goodies.  She will most likely be totally pumped about the wrapping paper, bows, and nothing else. We decided to go with the easy “something to WEAR, something to READ, something you WANT, and something you NEED” formula for her gifts. She is in desperate need of a winter coat and slippers, is always down for books and new toys, and mommy kinda WANTED her to have to cutest little elf slippers i’ve ever seen.  This age is so much fun to shop for but a little tricky at the same time.  We went easy on the toys and aimed for mostly useful items that we can use over and over.  She is getting bored of her baby toys so having a few new things around will be great for her and we were in desperate need of a few new bath toys to keep her occupied and entertained.

Now we need to hit the hill for some sledding in the SNOW and I can’t wait to bake Christmas cookies with Reagan for the first time.  I’ve been waiting for our first Christmas with kids since the day I found out I was pregnant and have been playing Holiday music since the day after Halloween. End of Summer Baby Sales

As I headed downtown this morning for a work meeting, I was quickly reminded that today is the first day of school for lots of “littles” all around our area.  Labor Day is on the horizon and that usually signals the END OF SUMMER and the beginning of all things Fall.  Cooler weather, falling leaves, and early September days are all calling my name.  The changing of the seasons is extra special this year because it is the beginning of “a bunch of FIRSTS” for Little Reagan Marie.  First time doing Fall activities, first football season, first Halloween, First Thanksgiving, and of course Christmas is right around the corner.

Labor Day sales are everywhere right now including a bunch of Summer goodies for next year.  I rounded up some of my absolute favorites that I can’t wait to see Reagan sporting next Summer. And as a bonus everything is clearance pricing right now + an additional 40% OFF all clearance items.  This really is the only way to shop for your “littles.” They outgrow things so fast that it is impossible to justify spending $40 on a freaking baby outfit…but thats just my opinion.  And if you buy the right sizes you can see your sweet baby in the same cute outfits again next year!!!

I have always aimed to purchase any BIG baby items on super sale and Labor Day is no exception when it comes to great deals. Here are some of the other items that are on my radar for fantastic deals and steals when it comes to baby items!

PLAYPEN – We have been wanting a Playpen for awhile now but Miss Reagan was just not quite big enough. Now we are a few short weeks away from her sitting up on her own and I am so excited to have a place that can be all hers. After lots of research we decided to go with the 4moms Breeze Play Yard for convenience, storage, and longterm durability over multiple babies! It is on SUPERSALE right now and I could not be more excited!

HIGH CHAIR – We intentionally held off on purchasing some of the BIG baby items that we knew we wouldn’t need right away when I was pregnant. Well, the last 6 months have absolutely flown by and I can’t believe that it is time for Miss Reagan to be in a High Chair. I fell in love with the Boon Flair Pedestal High Chair and am so excited to snag it for a good deal. I love that it has interchangeable seats so we only have to purchase one high chair but can change the color if we have a little boy in the future. We have been using our Bumbo Chair with the Play Tray as a temporary place to feed Miss Reagan, but her chubby little baby legs are beginning to not fit in the seat openings. HAHAHAHAH. So…I am taking this as a sign that it might be time for her to get an upgrade.

BABY GATES – Miss Reagan is still months away from walking but she is getting big enough to be in a walker & jumper. And that little walker of hers will mysteriously make it across the length of our kitchen when i’m not paying attention. So we decided that its time for a baby gate! We have a set of steep stairs right off of our kitchen and I don’t want to risk a tumble. Labor Day seems like a good time to get this item on sale as well. We decided to go with the Summer Infant Multi-Use Baby Gate and can’t wait for it to get here.

Labor Day is going to be extremely low key. We finally had our fence rebuilt after the crazy windstorm blew it apart last November. We’ve been hard at work staining every little nook and cranny whenever we get some free time together. So far it is coming together nicely and the color really pops against our yard!!! So happy to finally have some stain on it and we will most likely wrap up that project over the long weekend. September 2nd is Reagan’s Half Birthday and she will be 6months old. Holy Crap! Where did the time go?  Its been so fun watching her grow up and I am so looking forward to her walking and getting dressed up for Halloween.

Happy July First

Happy July 1st to you ALL and Happy Friday Friends!!

I am so exited to be kicking off the long weekend with everything fun & festive for the Fourth of July. I love a good LONG weekend! Holidays that spill over onto a Monday mean a little extra sleep (maybe), a little extra help from the hubs, and lots of FUN and SUNSHINE celebrating the Red, White, and Blue. We are headed to the lake for the Fourth this year and are so excited to celebrate Miss Reagan’s first Fourth of July! We’ve got some amazing food, activities, and festive outfits planned, and just can’t wait to wrap up the week and get started on the FUN stuff.

I’ve finally rounded up my meal plan for the Fourth and this is what we are thinking. Every year we kick off our Fourth with these festive Red, White, & Blue Waffles for breakfast.  We’ve got lunch covered with my husbands delicious BBQ Pulled Beef Sandwiches and I am excited to try a NEW recipe for Lentil Salad with Cumin Lime Dressing. I actually really enjoy cooking as long as I have a decent recipe to follow and Reagan is preoccupied for a bit! Dinner is going to be classic BBQ Chicken (a staple/can’t MESS it up), but I was seriously drawn to this recipe for BBQ Chicken Bacon Pineapple Kabobs. They look AH-MAZING!!! It wouldn’t be the Fourth without Corn on the Cob and of course our 4th of July tradition…a Gourmet S’Mores Bar complete with all the candy classics. I just might end up looking pregnant again but will have had one HELL of GOOD TIME!

We’ve got our food covered, all our festive outfits are planned (read about them HERE), and we are taking the whole weekend off to Play and Celebrate as a family.  Our baby girl is turning 4 months old TOMORROW!!!! Oh my goodness, where has the time gone? Watch for her four month pictures + updates coming next week…so excited to share all the details.  Some of our good friends are getting married on Sunday so we will be living it up and flying solo without Reagan. A little sad, a little excited, and a little confused by all the mommy emotions i’m feeling about leaving her.  Totally NORMAL stuff! And then of course Monday is one of the BEST DAYS OF THE WHOLE YEAR!!!! I think its safe to say this weekend is going to ROCK!!! 

Tonight, we’ve got friends coming over for pizza and to play Cards Against Humanity. I’ve never played before. We might be the last people on the planet to finally jump on that bandwagon, but am so EXCITED because I hear it is beyond hilarious and ridiculous! I bought the game the other day and thanks to Amazon Prime it arrived yesterday just in time for a whole mess of 4th of July shenanigans.

 It is no surprise that I am a lover of Holidays and anything festive.  When I think back to the Fourth last year, I was newly pregnant and in the beginning stages of good ol’ morning sickness…how FUN right??? I was a pouty party because I couldn’t drink, but was still head over heels happy because we were PREGNANT!!! We found out we were expecting over the holiday weekend last year and it was just so much fun.  The Fourth of July is one our favorite holidays and it is very serindipidous that we found out about our sweet baby while celebrating the Red, White, & Blue.

I’m just so excited to see what kind of festive shenanigans we can get into this year.  Miss Reagan is going to be representing the Red, White, & Blue and we will be taking her to the lake for the very first time. I am just so excited.  I know she is still too young to understand what is going on but its so fun to see her little eyes light up when she sees and experiences new things for the first time. Summer Nights

Ahh Summer nights have finally arrived and we are LOVING IT around here!!!

The days are bright and sunny, the evenings are so warm and enjoyable, and we’ve been taking advantage of the gorgeous weather and walking Miss Reagan and the girl puppies as much as possible.  I wear Reagan in my Tula Baby Carrier and we have a solid route that we explore. Its about four to five miles total. The exercise is fantastic for my postpartum mommy body, but we both get pretty warm while hiking along. I might be the worlds laziest momma, but she loves it when we let her hang out and cool down in ONLY her diaper after our nightly walks.  I’ve never seen a baby so happy to chill in her diaper and a bow.

 Reagan usually goes to bed around 7:30pm but sometimes we’ll keep her up past her bedtime and simply hang out as a family of three.  OR Mommy and Daddy can relax and enjoy the peace and calm together rocking the night away on our porch swing. I recently added some festive bistro lights to our front porch and I absolutely LOVE the way they turned out.  There is nothing better than sipping on a margarita and rocking the night away next to my hubby. We are definitely loving summer nights in the Haguewood household!

Hallelujah Friends, Summer has finally arrived!

I AM SO EXCITED for the weather to get HOT and then we are headed to the lake with our sweet baby girl. Our current weather status however, is less than appealing. Windy, stormy, and a bit rainy around here today. Not fun but a good excuse to stay indoors and get some work done!

Can I just take a second and gush over some of these cute and tiny baby swimsuits??? My heart is bursting in anticipation of seeing Miss Reagan in some of these adorable little suits.  Clearly, i’m loving everything “FLAMINGO” related right now! There is just something so bright and summery about bright Poppy and Flamingo colors! Plus, chunky baby legs and a tiny flamingo swimsuit seem like a rockin’ combination in my book. Not quite sure if i’m ready for “bikini season” as i’m still working to get some of the baby weight off. But in the spirit of summertime and cutting myself a little slack, I will be rocking a bikini this summer and I couldn’t be more thrilled! Growing a tiny human was hard work, and I am so proud of myself and my body. I’ve been eyeing this adorable striped JCrew bikini top, perfect for the nursing/pumping mommy and these girly H&M scalloped bikini bottoms! Love the color combination together and how dainty they look.

 I know for this summer at least, Miss Reagan will still be a little on the small side to play with a gigantic Pink Flamingo! Next year though, oh its on! I can’t wait to capture some photos of us sporting our matching Mama & Baby Pink Flamingo Floats from the SunnyLife! We are big time lake people and I can’t wait to get Miss Reagan out in the water for some summer fun! This year, we’ll stick to the Flamingo Stuffy Friend and some shade!!!!

Our Summer plans are somewhat minimal at this point but we do have a few things on the agenda that we won’t be missing.

#1 – We have several weddings to attend including one that means a mini-getaway for Mommy and Daddy. Gulp. It will be my first time away from the baby and i’m half-excited and half-terrified to leave her. The thought of sleeping through the night fully for two days makes me SOOOOOO happy, but she is also my little girl and I will miss the heck out of her! She will be in good hands though!

#2 – We are celebrating our 5-year wedding anniversary. Say What?!?!?! I’m not sure where the past five years have gone but i’m pretty darn excited to celebrate my love and best friend! Not sure what we are doing yet, probably chilling at home changing dirty diapers, but who knows what might go down!

#3 – We are spending a week at the lake relaxing while hopefully getting nice and tan!!

#4 – We will be celebrating AMERICA and all things patriotic over the 4th of July in true Haguewood fashion…like always!!!! The Fourth is always one of the biggest holidays on our calendar and we can’t wait for Miss Reagan to partake in all the FUN!

#5 – We will be keeping the patriotic train rolling as we celebrate the 2016 Rio Summer Olympics! GO TEAM USA!!!! WE LOVE WATCHING the Olympics and are ridiculously proud of our country and all that she stands for! What could be more patriotic than the olympics?!?! Can’t wait to hear Bob Costas voice and the good old Olympic anthem on the tv this summer!!

Memorial Day 2016…Summer Starts HERE!!!

WooHoo…Memorial Day is officially in the books and that means Summer has “unofficially” started! We enjoyed a completely relaxed and uneventful weekend at home complete with a mini family photo session, puppy walks, and a movie marathon on Saturday night. Ultimately, the extra time as a family was glorious.

Reagan is becoming much more engaging and really loves it when we talk and interact with her. So FUN!!! We are ready for all things Summer around here and simply can’t wait to take her to the lake for the first time.  I’m super stoked for all the adorable baby swimsuits out there. Baby Girl’s closet is already stocked and my heart just can’t handle it.

With all the FUN that a long holiday weekend brings, its easy to forget the meaning of the day.  Its amazing to me that the simple act of bringing a child into this world has forever changed my perspective and the extreme amount of gratitude I have for those who have served and are currently serving. My heart is so grateful for the sacrifices made to ensure that our freedom will go on for generations to come. And that next generation includes my daughter. My heart wants so badly for her to grow up in a peaceful world and we all owe the biggest THANK YOU to those you have made the greatest sacrifice in the pursuit of that goal.

Happy New Year…Cheers to 2015

Happy New Year

I’m so happy and excited that 2015 has finally arrived.  I’m ready for a brand new year full of exciting possibilities.  I hope everyone had a fantastic start to the new year and a fun and “SAFE” New Years Eve!!! We had a fun night out with friends and a fantastic meal.  We celebrated the New Year and my Birthday on the dance floor and kissed at midnight!!! It was epic!!! I seem to love my husband more and more as each day passes.

I did manage to squeeze in a quick baking session and busted out some fantastic and adorable Pink Champagne Cupcakes to ring in the New Year!

My sweet mom got me this fantastic gold bar cart for my birthday.  I had a blast decorating it for our New Years Celebrations and am looking forward to all the fun holidays to come!!!

I know i’m a little late getting a start on 2015 but I had some work done on my computer.  I’m so happy to say that my lifeline is finally back in my possession and i’m one HAPPY GIRL.  I felt completely restless without my computer and I couldn’t believe how useless I felt.  I really need to work on being “less attached” to my electronic devices!!! Moving on…

I’ve officially decided that this is the year of “NO RESOLUTIONS” for me.   Instead, i’m simply going to work on changing my “mood” in this crazy and wonderful life…

And this is exactly where i’m at as I made the transition from 26 to 27 years old.  It seems a small shift from one day to the next, and yet I do feel slightly older and my perspective has shifted along with the new year!!!

I’ve been taking it one step at a time around the house cleaning, organizing, and chucking things as much as possible. I did manage to tear down all our Christmas goodies on New Years Day.  I am always so sad to pack them away until next year, but the house always feels clean and huge once they are all down.

Thats all i’ve got for now but I do have BIG plans for the next few months and hopefully some exciting news coming soon.

Cheers to 2015 and focusing on my own “SHIT” and discovering success in the new year!!!

Soup Sunday – CrockPot Chicken Enchilada Soup

Hello Hello Friends, i’m back today with another “fab” recipe.  My first Soup Sunday was such a HIT with the hubby that I just knew I needed to dial up something awesome for week 2.  My sweet hubby so kindly pointed out that Week 1’s Loaded Potato Soup was seriously lacking in Protein.  I knew I needed to get my act together and wanted to try something with chicken.  I found multiple recipes that seemed so-so but finally ended up “making my own” recipe.  GASP, because I am so not a cook and totally do better when I have a detailed recipe to follow.  Luckily, my Chicken Enchilada Soup turned out soooooo yummy and is a bit like a “glorified” Taco Soup. HAHA.

So…here is my recipe for CrockPot Chicken Enchilada Soup!!!!

CrockPot Chicken Enchilada #1 Soup

Start by gathering all your ingredients.  I had to de-thaw my chicken breasts and that took about 45 min. to an hour.  Also, per my husbands “more protein” request I used 6 chicken breasts instead of 2. Chop up the chicken,  dice your onion, and dice your green pepper.

Following the given measurements in the recipe above, dump all the ingredients into your CrockPot.  Stir to mix all the ingredients and spices.

Let this cook and simmer for 3-4 hours on LOW or 6 hours on HIGH!!!!

Sprinkle some pepperjack cheese and cilantro on top of the soup, re-cover and allow the cheese to melt!

I served my soup with some yummy Spanish rice and warmed soft tortillas!!!  Ladle into serving bowls, top with extra pepperjack cheese and cilantro, and finish with a dollop of sour cream if desired.

This recipe was a BIG hit in our family and I was so pleased with how it turned out.  I was surprised with how “spicy” the recipe is however!!!! My husband loved it!!!

Hey Friends!!! Oh my goodness, i’m so excited to announce that this is my 100th Blog Post here on Every Day Should Sparkle!!! Its just so exciting and I feel so honored and blessed to have even reached this point with my blog. I truly love writing my blog posts and enjoy every second of the CREATIVITY and FUN that I have the opportunity to pass along to you all!!!

We’ve been celebrating all kinds of fun and exciting milestones in our family this past week, one of which was the arrival of our littlest fur child, Roxie, one year ago.  We were so excited to be “puppy parents” and the arrival of our sweet little dog was one of the biggest blessings in our life.  Little Miss Roxie Poxie Dog turned 1-year old on August 30th of this year and we celebrated her arrival into our family on October 11th. We absolutely love our “little dog” to pieces.  It has been so much fun watching her grow up and seeing her cute personality develop.  She is the happiest and sweetest dog around, she LOVES her ball and playing fetch more than anything, and she always wants to be right next to us.  She loves being the center of attention and loves her BIG SISTER Jovie soooooo much!!!!
